Cashew Nut Bread

Created by Chef Leah of E.A.T Marketplace in old town Temecula. This bread is gluten-free and grain-free


  • 1 cup Cashew Nut Butter
  • 5 large eggs
  • 1 tablespoon apple cider vinegar
  • ¾ tsp baking soda
  • ¼ tsp sea salt


  • In a food processor pulse together cashew butter and eggs until very smooth (difficult by hand- but if that is all you have- pre-beat eggs, then add to cashew butter slowly and incorporate).
  • Pulse in apple cider vinegar
  • Pulse in baking soda and salt
  • Transfer batter to a greased 9×5 in. loaf pan (bread pan)  
  • Bake at 350°F for 45 minutes *if the top is over-browning, add foil half to top.
  • Cool for 2 hours, slice and serve or freeze in batches for later enjoyment!
